(Pronounced “TWELVE C”) Twelve (12) degrees Centigrade or Fifty-five (55) degrees Fahrenheit, which is the optimum storage temperature for wine.

The harvest began just as the sun rose on the morning of October 12, 2009. The pick date was perfectly planned as a major storm arrived in Napa the following day. The 2009 growing season had very cool temperatures. A longer than normal hang time for the grapes allowed Mike to hit the target very nicely.
